Broccoli and Pearl Barley Salad
  • 5 1/2 ounces pear! barley
  • 2 cups water
  • 7 ounces broccoli, cut into small florets
  • 3 zucchinis, thickly sliced
  • 2 cups sugar snap peas, halved
  • 1/2 cup dried apricots, thinly sliced
  • 1/4 cup pumpkin seeds
  • Salt and pepper

Spicy tomato dressing:

  • 1/2 tablespoons olive oil
  • 1 tablespoon tomato puree
  • 2 tablespoons fresh lime juice
  • 2 teaspoons ground cumin Dash of Tabasco sauce
  • 1 garlic clove, crushed
  • 2 tablespoons chopped fresh cilantro or parsley (optional)

Preparation time | 20 minutes

Cooking time | 35 minutes

1. Rinse the barley in a strainer under cool water. Drain and place in a saucepan, Cover with 2 cups of cold water. Bring toa boil, then reduce the heat to low and cover. Simmer very gently until most of the water has been absorbed and the grains are tender but still firm, about 30 minutes, Drain the barley well.

2. While the barley is cooking, bring a second pot of water to a boil. Add the broccoli florets, zucchini, and peas, and bring back to a boil. Reduce the heat and simmer the vegetables until they are just tender but still crisp, about 34 minutes, then drain well and rinse briefly with cold water.
